West Cork are one of the few remaining family owned distilleries in Ireland. A very unique distillery with a strong focus on tradition. Being the most southerly distillery in Ireland, its mesothermal climate (meaning it has high precipitation and high relative humidity) makes it absolutely ideal for whiskey maturation. It is one of very few distilleries to use pure Irish spring water . Only use the highest quality wheat and barley – sourced only locally. They are the only distillery in Ireland to malt their own barley, on-site. They created and built their own stills, driven by their passion for excellence. All whiskey is produced in small pot stills (with a low wine to copper ratio) and are aged in a mixture of double-charred ex-bourbon casks (using a proprietary process) accentuating the smooth vanilla notes, and also aged in Spanish Oloroso sherry casks.
